We make our sausages with high meat content, natural casings, and nothing you can't pronounce — because when the pork is this good, the job of the recipe is to get out of the way. The classic is exactly that: pure Mangalitza, simply seasoned, in a natural casing. The raw chorizo brings smoked paprika and warmth to that extraordinary fat. The chipolatas are for the pan, the barbecue, and the centrepiece of a proper brunch.

Mangalitza sausages cook differently to what you're used to. The fat content is higher and more complex — they colour beautifully, stay juicier for longer, and taste of something. Properly.
